Spinach and Cheese Pita Pizzas with Tomato Salad Servings: 4 / TOTAL TIME: 30 mins

INGREDIENTS:

2 pitas, split in half horizontally

2 cloves garlic

3 tbsp. olive oil

1/4 tsp. red pepper flakes

Kosher salt

1 lb. large mixed-color tomatoes, cut into

chunks

1 small bunch spinach, thick stems discarded

3 oz. very thinly sliced provolone cheese, torn

2 oz. feta cheese, crumbled

DIRECTIONS:

  1. Heat oven to 450°F. Line a rimmed baking sheet with foil.

  2. Put pitas, cut sides down, on the prepared sheet and bake until golden brown and crisp, 5 to 6 minutes. Flip over so cut sides are facing up.

  3. Meanwhile, finely grate garlic into a large bowl. Add oil, red pepper flakes, and 1/2 teaspoon salt and stir to combine. Transfer 1 tablespoon of oil mixture to a second bowl and toss with tomatoes. Let sit until ready to serve.

  4. Toss spinach in remaining oil mixture to coat evenly. Divide spinach, provolone, and feta among pitas. Bake until cheese melts and spinach wilts, about 5 minutes. Serve hot with tomato salad.
